Flavor Profile
Pale and creamy, and then unmistakably ginseng : earthy, root-like, faintly bitter at the finish. The strongest-tasting jar we make, and the one people either take daily or leave alone.
Most people take it in tea, or straight off the spoon, rather than on toast.
Underneath it is a light organic wildflower honey from Alberta . Its mildness is the point: it carries the ginseng without competing with it.

Ginseng: An Ancient Root
Ginseng has been used for thousands of years in traditional Chinese and Korean medicine, prized as a root believed to restore energy and balance in the body.
Ours is Canadian-grown ginseng , cultivated here and blended into the honey rather than added as an afterthought.
The flavour is genuinely strong. The honey balances it rather than hiding it, which is the point.
Texture & What to Expect
It arrives thick and creamy, pale rather than golden . Raw honey sets naturally when it is never heated or filtered.
Because nothing is filtered out of the honey, you may spot fine traces of beeswax, pollen and propolis . That is not sediment, it is the hive. The honey is never heated, so its natural enzymes stay intact instead of being cooked off.
Stand the jar in warm water if you prefer it looser.

Why Alberta & Certified Organic
This one comes from the wilds of Northern Alberta: not our Boreal Forest apiaries. Single-source, harvested once a year, never blended.
Canadian organic rules require every floral source within a 3 km radius of the hive to be organic too, roughly 28 km² of protected forage. In practice that rules out any beekeeper sitting near conventional farmland, a golf course or a factory, which is why certified-organic Canadian honey is genuinely hard to come by.
It goes past location, too: organic beekeepers have to source organically raised replacement bees, feed with organic honey, and use organic beeswax for the comb foundations. Independently certified by EcoCert, and audited every year.

Questions (6)
What does “certified organic” mean here? It’s EcoCert-certified, not self-declared: the bees forage a roughly 3 km organic radius free of prohibited substances, and everything from hive to jar meets Canadian organic standards. It’s independently audited every year.
Is it Kosher? Yes. It is certified Kosher for Passover (the stricter grade).
Why is my honey white and creamy? Is something wrong? Nothing’s wrong; that’s the proof it’s real. Raw honey crystallizes naturally. Warm the jar gently if you prefer it runny.
Is it pasteurized? Is the glass BPA-free / the honey gluten-free? Unpasteurized and never heated above the temperature of a beehive. The glass jar is BPA-free, and honey is naturally gluten-free.
Is this the same as your Boreal Wildflower? Same family, different honey. This one is certified organic and from Alberta; our Boreal Wildflower is from Northern Ontario and isn’t certified organic. Both are raw, single-source, and lab-tested.
Is honey safe for babies? No. Never give honey to a child under 12 months, raw or pasteurized. That’s a standard infant-botulism precaution and it applies to all honey, from every producer.
